Ingredients

  • Cooked rice - 2 cups
  • Ladies finger/Okra - 200gm
  • Onion,- 1(chopped)
  • Tomato-1 (Chopped)
  • green chillie- 1
  • Chillie Powder- 1/2 tsp
  • Coriander powder- 1/4 tsp
  • Oil as required
  • mustard seeds - 1/4 tsp
  • cumin seeds- 1/4 tsp
  • Curry leaves a few
  • hing a pinch
  • Salt to taste
 

Preparation method

  1. Heat 2 tbsp of oil in a pan. When the oil is hot, add the slited green chillie, when it is roasted, add the cut okra's and shallow fry them until well-cooked and crisp
  2. While cooking the okra's/ladies finger, sprinkle little salt and saute. 
  3. take a small skillet , heat a tsp of oil, Splutter mustard and cumin seeds. Add hing and curry leaves. 
  4. When the curry leaves are fried, add onion and saute till translucent.
  5. Add tomatoes, chillie powder, coriander powder and salt. Sprinkle little water to it. Cook till oil separates.
  6. When the tomatoes are cooked, add the partly fried okra's and saute them twice .
  7. Switch of the stove. 
  8. Mix it well with rice. with a tsp of ghee
  9. Serve Warm with Crisps.
